No matter how much one wants to, one can’t eat peanut butter sandwiches every day! One of the more interesting varieties is a recipe I got in For Smith, Arkansas. Sometimes I prepare it without jelly and sometimes even without peanut butter (but what to call it then is a problem!). A friend who read the recipe says it belongs in the Smithsonian! Anyhow, it’s great to take a Peanut Butter Break when you are deep in painting the live long day!
Arkansas Olio
Mayonnaise |
Longhorn cheese, sliced |
Skippy peanut butter |
Blackberry jelly |
2 slices whole wheat bread |
Mustard |
Bacon, 3 slices, fried crispy |
Cinnamon |
Onion, one, raw, sliced |
Spread mayonnaise and peanut butter on the 2 slices of bread. Stack the next 4 ingredients on 1 slice of that bread and close the sandwich. Spread mustard on top and sprinkle cinnamon to taste. A bit messy, so serve on a paper towel.
